Almond, (Amygdalus communis L.), is an ancient crop of southwest Asia.
The selection of the sweet type marks the beginning of almond domestication.
Wild almonds are bitter and eating even a relatively small number of nuts can be fatal.
The USDA has two grades for shelled almonds:
- U.S. No. 1 (NPS) and U.S. Select Sheller Run (CSSR). NPS, also known as Supreme, is a higher quality almond with a lighter colour and fewer scratches compared to CSSR
- CSSR is a mid-quality grade that is suitable for applications where minimal sorting or processing is required, such as confectionery products and is also suitable for further processing
